If it only takes the Lake Trout 30 days to grow large enought to escape the Burbot, then why can the Feds rear the Lake trout for another 30 day? They're referred to as "freshwater cod" or "poor man's lobster". If you catch them in the winter, their flesh is supposedly tighter.
